This week I would like to introduce a delicious SoMeat Roulade with Spinach and Blue Cheese. This comforting dish is easy to make yet quite impressive. For me, it is a perfect dish for small dinner gatherings. Furthermore, the addition of peanuts makes the flavors perfectly balanced. I hope you enjoy!

SoMeat Roulade with Spinach and Blue Cheese

Ingredients

SoMeat - Plant - Based Mince 200g
Spinach 150g
Rice Paper 3
Vegan Blue Cheese
Peanuts 50g
Salt and Pepper

Remove the stems of the spinach and chop into quarters.

Add olive oil on the pan and sauté the spinach over a medium heat. When the spinach is wilted, add the vegan blue cheese, stir for about 1 min then remove from heat.

On the rice paper, evenly spread 1/3 of the SoMeat and add the spinach and peanuts on top. Season with salt and pepper and then roll.

Fry the rolls over a medium heat for about 5 mins. Serve warm with your sauce of choice or without.
