In September the weather changes a lot, mornings are cooler but days are still quite hot. So a light warm dinner seems like a good idea. That’s why, this week I would like to introduce a SoMeat Mozzarella Eggplant. Eggplants are high-fiber, low calorie food that is rich in nutrients and, most of all, so delicious. Let’s enjoy!

SoMeat Mozzarella Eggplant

Serves 2-3 people

Ingredients

SoMeat - Plant - Based Mince 100g
Medium Size Eggplant 2
Cherry Tomatoes 10
Vegan Mozzarella 4 slices
Fresh Basil 10 leaves
Salt and Pepper to taste
Tomato Sauce optional

Cut the eggplants in half – lengthwise and scoop out any seeds inside. Sprinkle with salt. Then grill for about 10 min.

In a pan, fry the SoMeat and quartered cherry tomatoes over a medium heat, for about 5 min.
