In September the weather changes a lot, mornings are cooler but days are still quite hot. So a light warm dinner seems like a good idea. That’s why, this week I would like to introduce a SoMeat Mozzarella Eggplant. Eggplants are high-fiber, low calorie food that is rich in nutrients and, most of all, so delicious. Let’s enjoy!
Recipe

Cut the eggplants in half – lengthwise and scoop out any seeds inside. Sprinkle with salt. Then grill for about 10 min.
Meanwhile…

Cut the Vegan Mozzarella (for easier melting) and add to 3. Keep warming until the Vegan Mozzarella melts. Spice to taste.

Put the SoMeat Mozzarella onto grilled eggplants and serve with warm tomato sauce.
