This week I would like to introduce a SoMeat – Herbal Balls Salad with Pomegranate. This spring salad is packed with vitamins and unique flavors combinations. From mint-fresh to apple-sweet and lemon-sour. Additionally, pomegranate seeds provide that crunchy addition and are a great source of vitamin E and magnesium.

SoMeat - Plant - Based Mince | 100g |
Fresh Mint | 4 stems |
Fresh Dill | 4 stems |
Fresh Italian Parsley | 4 stems |
Red Pepper Flakes | 1/2 teaspoon |
Olive Oil | 1 tablespoon |
For Creamy Sauce | |
Soy Yoghurt | 100g |
Fresh Dill | 4stems |
Cucumber | half |
Fresh Lemon Juice | from half lemon |
Pepper | to taste |
For Salad | |
Baby Leaves Salad Mix | 3 cups |
Pomegranate | half |
Apple | quarter |
Cherry Tomatoes | optional |

SoMeat – Herbal Balls

Make about 9 medium-sized balls and fry them over a medium heat until golden brown. Stir when frying.
Creamy Sauce

In a bowl whisk the soy yoghurt with lemon juice. Then add finely chopped dill and diced cucumber. Add pepper to taste.
Salad

In a mixing bowl mix salad with the creamy sauce. Try mixing with your hands, so that the salad won’t lose the volume. Then add pomegranate seeds.

Serve the salad with the SoMeat – Herbal Balls and apples or cherry tomatoes.
