June is a perfect month to enjoy eggplants. We can choose from many sizes and variations. So this week I would like to introduce a simple Italian inspired – SoMeat, Eggplant and Dry Tomato Sandwich. It is very satisfying and yet light, after work dinner idea. Eggplants are rich in vitamin A – retinol – which is so important to keep our skin glowing and healthy. Let’s enjoy summer, sun and radiant skin!
Meanwhile . . .
In a pan, fry the cut dry tomatoes and the SoMeat, over a medium heat, until nicely combined. Then add the black truffle salt, parmesan and pepper, to taste.
When the eggplants are ready peel and dice them.
Add 4. to 3. and braise until eggplants soften for about 10 min. Sprinkle with the lime juice and serve with warm bread.
