In December there are so many Christmas Parties and we tend to eat a lot. So the day after we don’t really feel like having a big meal. Therefore, this week I would like to introduce a SoMeat Bruschetta. It is a light and refreshing meal, that is easy and quick to prepare. Additionally, tomatoes keep the digestive system healthy! Please try
Halve the cherry tomatoes and mix them with olive oil. Season to taste with herbs, salt and pepper. Leave for about 5 min.
Add 1. to the SoMeat, mix and keep frying for about 5 min, until all nicely combined. ( You can add about 2 tablespoons of shredded vegan cheese for a richer taste.)
Serve warmed baguette with SoMeat – tomato sauce and fresh basil.
